Authentic vs. Not
Most Italian tomato based recipes will ask you to use if possible canned San Marzanos grown in the Valle del Sarno (valley of the Sarno) in Italy labeled as Pomodoro S. Marzano dell’Agro Sarnese-Nocerino and which have the EU “DOP” emblem on the label for an authentic Italian flavor, similar to what you would find traveling in Italy and sampling delicious food.
What to watch out for
- Is it labeled: Pomodoro S. Marzano dell’Agro Sarnese-Nocerino ?
- Does it have the seals and DOP numbering ?
Brand is Important
Just because the certificates are correct does not guarantee that the product is the best that it can be. The Sclafani family look for small batch slow speed processors to pack their San Marzano from the Valle del Sarno tomatoes. Why? Because high speed packing operations require a flavor killing processing temperature combined with the jostling movement that breaks down the whole peeled tomato. Its a subtle flavor and texture difference that many detect an appreciate.
